In the southern Côtes du Rhône Region, nine wine varieties share the same geological characteristics of clay-limestone, rounded pebbles, red rock and sand. On the slopes of the famous Châteauneuf-du-Pape, the Protected Designation of Origin wine LIRAC is an appellation that produces red, white and rosé wines that, in the eyes of many, embodies the future of the terroir.

Domaine du Tau was created under this appellation by Thierry Chapusot, an entrepreneur from Lorraine with a passion for wine and history. Together with experts as passionate and committed as himself, he has created an exceptional human ecosystem to manage the 16 hectares of vines. Within the Châteauneuf-du-Pape village, the Domaine du Tau produces four high-quality vintages, from the most affordable to the most prestigious, combining respect for tradition and modernity. It is destined to become a popular wine destination in the region.

Carrying the symbol of the Tau (the sign of divine protection in Genesis), the Estate exudes hospitality and excellence, rooted in the great history of French wine-making. A location with soul that draws its history from the confines of East and West, imbuing the nectars produced with a unique quality.


A HISTORY OF ENTHUSIASTS:

Not even the best project can be built without the best people working on it; around Thierry Chapusot, a team of professionals decided to pool their knowledge.

Passionate about the world of wine and history, Thierry Chapusot, an entrepreneur for 40 years, has joined forces with expert friends to create a new Domaine of LIRAC wine, one of the nine crus of the southern Côtes du Rhône region.

Bruno Ramirez, Jean-Luc Maldant and Thierry Chapusot are convinced that LIRAC wine, located just a few kilometers from Châteauneuf-du-Pape, is destined for greatness thanks to its exceptional terroir. They have joined forces to create this new Domaine by acquiring 16 hectares of vines in the Saint-Laurent-des-Arbres village.

Bruno Ramirez, Cellar Master, has 30 years’ experience in viticulture and wine-making at various Châteauneuf-du-Pape Estates. Bruno is a man of the soil. He devotes his life to wine-growing and has a predilection for the southern Côtes du Rhône.

Jean-Luc Maldant is from Burgundy and owner of Domaine Maldant-Pauvelot in Chorey-les-Beaune. With 40 years of experience, he produces high-end wines such as Corton-Charlemagne. Jean-Luc believes that LIRAC is a wine with a promising future and has set his sights on producing great wines with Domaine du Tau.

Striving for excellence, the Estate is advised by well-known winemaker Gérald Lafont, himself a child of Saint-Laurent-des-Arbres and master connoisseur of LIRAC wine. Gérald has dual experience as both scientist and winemaker, himself practicing as a winemaker of his family estate.

Thierry Chapusot

Thierry Chapusot is an entrepreneur from Lorraine who, until 2022, was Chairman of The Welcoop Pharmacists Cooperative. An engineer by training who began his career in the United States, in 1985 he founded Pharmagest, now Equasens, a listed IT company and France’s leading healthcare IT specialist. A successful multi-entrepreneur, he created Domaine du Tau to take on a new entrepreneurial challenge combining passion, culture and history. Investor and active participant, his credo is to produce top-quality products, making the Estate one of the finest wine destinations in the world.

Bruno Ramirez

Cellar Master Bruno Ramirez is a child of Châteauneuf-du-Pape, a rugby player who grew up in the vineyards alongside his father. Bruno has worked in all the vineyard trades to become a respected “Maître de Chai” (Cellar Master), having worked for the major Châteauneuf-du-Pape Houses. After contributing to streamlining the Estate, it was a natural step for him to become the Cellar Master. Incidentally, the Estate’s main winery, currently under construction in the heart of Châteauneuf-du-Pape, is located in the Bastide which saw him grow up, emphasizing the Domaine du Tau’s identity as a family-run business.

Jean-Luc Maldant

A Burgundian winemaker and owner of a 23-hectare estate in Chorey-les-Beaune, Jean-Luc Maldant has 40 years of harvesting behind him, bringing a wealth of Burgundian technical knowledge to the table. A great fan of LIRAC and Côtes du Rhône wines, he was won over by Domaine de Tau, to which he brings high-quality added value. His complementarity with Bruno Ramirez is rich in practical experience.

Gérald LAFONT

Gérald Lafont is a consultant oenologist with over 20 years’ experience. He has a great reputation and is the person who knows the LIRAC appellation best. He advises major estates in France and abroad. Having inherited his father’s vineyards under LIRAC, he is also a winemaker, combining theory and practice to perfection.

VINEYARDS

Depending on the plot, the terroirs are sandy, rounded pebble, red rock or clay-limestone.

14 hectares are under LIRAC with Grenache, Syrah, Mourvèdre and Cinsault varietals.

2 hectares nearby are under the high-quality Vin de France appellation with Grenache, Syrah, Tempranillo and Carignan varietals.

The vines are between 20 and 85 years old.

To ensure that the grapes are harvested at the right ripeness, the picking date varies according to plot and grape variety, and the berries are regularly tasted.

The Estate has been awarded the High Environmental Value certificate and has chosen to go organic.

The greatest respect is shown to the vines and the surrounding bio-diversity.

The various terroirs and grape varieties enable the blending process to create elegant, gourmet wines borne of true alchemy.

LIRAC cuvee Protected Designation of Origin

A 2022 vintage of 41,000 bottles, with great finesse and balance, with aromas of ripe blackcurrant, licorice and cocoa.

Despite its young age, it’s easy to drink now.

A blend of Grenache, Syrah and Cinsault.

5% aged in oak barrels on a clay-limestone and rounded pebble terroir.

LIRAC "Les Cosses" cuvee Protected Designation of Origin
21,50€ TTC

A 2022 vintage of 20,000 bottles from the Les Cosses lands, which are of the highest quality, with low yields (30 Hl per hectare) which allows for the concentration of flavors.

Bottling will take place at the beginning of 2024 to allow for longer ageing, partly in vats and partly in oak barrels.

Great finesse, elegance, aromas of ripe fruit, licorice, garrigue and a hint of spice.

Grenache, Syrah, Cinsault and Mouvèdre grapes aged 15% in oak barrels on a sand and rounded pebble terroir.

Ambassadeur Cuvee LIRAC WINE, Protected Designation of Origin

This is a private wine reserved exclusively for wine enthusiasts who want to fully experience the Domaine du TAU adventure (limited to 100 recipients).

To buy this wine, you need to be an ambassador and promote the Domaine.

The vintage is a plot-by-plot selection of the highest quality grapes from 50-year-old vines with very low yields, but a high concentration of aromas. Aged in 30% oak barrels, the vintage will be bottled in early 2024.

The best Grenache and Syrah grapes on a terroir of limestone, sand and marl lend aromas of blackberry, licorice and thyme in generous concentrations.

Ambassadors enjoy the following benefits:

  • The Domaine’s first 101 bottles, which were bottled in June 2023 (Lirac wine), have been set aside as collectors’ items: Bottle number 0, the mother bottle, will remain at the Estate. The labels of the first hundred special bottles will be designed by an artist who has created a work around the TAU (www.gregorybrunsperger.fr). It’s important to understand that it is rare for a wine estate to be created from scratch, and it’s possible that these first 100 Estate bottles will have a story to tell. Who knows?
  • Each year, we’ll repeat the first 100 bottles with a work of art, and each ambassador will receive a collector’s bottle. Each Ambassador can thus create a collection of Estate collector bottles.
  • The labels can be personalized  with the ambassador’s name or the name of their choice, a company name, etc.

INNOVATION

Opening 2025

In keeping with tradition, an innovative new winery is being built in the village of Châteauneuf-du-Pape in an old Provençal bastide.

The new winery will recycle rainwater to preserve the region’s fragile water tables, and will feature high-quality insulation to limit the use of heating and air-conditioning.

To guarantee the optimum quality of our wines, the winery operates by gravity. Vinification is carried out in stainless steel vats on the first floor, and the wine is aged in vats, oak tuns and barrels at a depth of at least four meters.

To promote wine tourism, the old Provencal bastide has been refurbished with ultra-modern comforts, offering four luxurious rooms.
